This class is brought to you in conjunction with the film screening "Last Man Fishing" at Gorton Community Center, Green Minds Lake Forest/Lake Bluff & Sitka Salmon Shares. Wendy will share 3 unique fish dishes, featuring sustainably caught seafood thanks to Sitka Salmon.

A cinematic look at a vastly changing seafood system through the lens of small-boat fishers and experts around the United States. Essential oils are the juice or GUT of plants, trees, shrubs, flowers, roots and bushes. These oils protect the plant and can do the same for us humans (and animals-if you have a dog, they will love them!). Come learn how, why, when and where to apply, diffuse and ingest essential oils. You will leave knowing how to support your mood, sleep, gut and every other part of your body from this hands-on workshop. 


During this workshop, you’ll make 3-roller bottles to take home with you. The rollers, your new BFF’s are: 

  • 1-for sleep 
  • 1-for focus
  • 1-for releasing stress

-Patatas Bravas (Roasted or fried potatoes with spicy sauce)

-Iberico Ham Croquetas (fried croquettes made with béchamel sauce)

-Gambas al Ajillo with Aioli (Shrimps)

-Pan con Tomate (grilled bread with olive oil, rubbed tomatoes and garlic) with boursin cheese, roasted peppers and capers on top

This class is inspired by Chef Jessica Dawson’s time working at world renounced fish restaurant Tjöruhúsið- located in the Westfjords of Iceland. Learn how to cook dishes that made Tjöruhúsið famous, discover the history of Icelandic food and find how a Chicago girl ended up 3,036 miles from home, accidentally cooking in a small fishing village. 


Class is open to all students and anyone who would like to learn to pronounce Tjöruhúsið. 

South American Cooking

Based on Chef Jessica Dawson's travels through South America, she will focus on the ingredients that make South American cooking and living unforgettable. You can follow her journey on her website Jessica Hits the Road where you'll uncover clues to the dishes we'll be making in class and become familiar with the regions they originate from. Meal included.
