About Nick Marsalek

Chef Nick grew up locally in Lake County. He developed a love of cooking from his father and grandmother. After high school Nick went to The Culinary Institute of America in Hyde Park, New York. There he completed his Bachelor of Professional Studies in Culinary and Hospitality Management.  After completing school Nick pursued his favorite food and worked at Blackwood BBQ and Catering in Chicago. From there, he went to The Chocolate Sanctuary in Gurnee. At the Chocolate Sanctuary Nick piqued his creativity by incorporating Cocoa into every aspect of the restaurant. He produced and executed monthly Themed Chefs Dinners.  

Taking all his experience, Nick joined the team at Elawa. He is excited to help implement a food culture based around hyperlocal and sustainable food ways.
