  • Braising & Stewing

    Braising & Stewing

    Saturday, February 1, 2025
    10 am - 12:30 pm

    Braising - the art of searing at a high temperature, then finishing in a liquid at a lower temperature - can add deep richness and umami to any meal! Meanwhile, stewing is the art of slowly cooking on the stovetop. In this class, Chef Dave Oland will demonstrate red wine braised short ribs with creamy polenta as well as saffron and tomato stewed chicken thighs with orange & dry cured olive braised fennel.

  • The French Bistro

    Wednesday, February 5, 2025
    6 pm - 8:30 pm

    Explore the enduring charm of modern bistros in this class, where we'll dive into classic French dishes and their history. Start with a Salad Lyonnaise, then enjoy Moules et Frites (mussels with fries), and finish with Onglet (hanger steak) served with a creamy potato purée à la Joël Robuchon. Learn the flavors that define this iconic culinary tradition.

  • Chocolate Desserts

    Love is in the air! Join Chef Gale Gand for a class full of chocolate desserts just in time before Valentine's day. Chef Gand will teach you 3 chocolate dessert recipes perfect to celebrate the holiday. You will also learn how chocolate is grown, harvested, and how it goes from bean to bar, and what some of the best brands are.

    Tastes will be provided at the end of class.

  • Taco Tuesday

    Join award-winning chef and founder of Libertyville’s Milwalky Taco, Chef Lee, along with Chef David, as they take you on a culinary journey through Mexico’s vibrant taco culture. You’ll learn to make tortillas from scratch and create three delicious taco varieties—Baja style, Al Pastor, and grilled skirt steak—paired with a selection of homemade salsas. Plus, enjoy a special guest presentation on tequilas, complete with a tasting and a handcrafted margarita!

  • Paella Dinner Party

    6 pm - 8:30 pm

    Join award-winning Chef David Oland, formerly of Mercat a la Planxa Tapas Bar, for an unforgettable evening exploring the history and culture behind the iconic Spanish dish, Paella. The menu features Gambas a Ajillo (garlic shrimp), Tortilla Española, Arroz Negro, and Paella Valenciana (paella with rabbit, chicken, and chorizo). As you learn, you'll also enjoy freshly made Sangria, all while Chef David guides you through the process.

  • Sourdough 101

    Join our Pastry Chef Maggie Logan, in exploring the benefits and ease of making "good for you" bread the old fashioned way. This class will feature how to make and use sourdough fermentation as a core ingredient of a healthy, delicious bread. Class participants will make and take home three types of bread all produced with sourdough, as well as some leaven to get the baking started in your own kitchen.

    It’s that time of year again—time to start seeds indoors and prepare for the upcoming growing season! In our Seed Starting class, Elaine, Elawa Farm's Director of Farm Operations, will guide you through the process of selecting the right seeds to start indoors, when to plant them, and how to create the perfect environment for them to thrive. You’ll also learn about the materials you'll need and the essential steps to ensure success. By the end of the class, you’ll take home your very own starter container of onion seeds.

Perfect Turkey, Perfect Gravy.

Bring your apron and give thanks for this turkey rescue class by Chef David Oland! You will learn the essentials of cooking traditional turkey and gravy components of Thanksgiving. Chef David will demonstrate brining, seasoning, roasting a turkey whole, as well as breaking down the bird into breasts and legs for faster, more even cooking. He will make turkey stock and a lump-free (we promise!) gravy.

Come join Holly Kyle of “Mama H’s Paper White Purpose” at Elawa Farm where she will show you how to plant paper white bulbs in your container, ready to bloom and enjoy in 4-5 weeks.

Holly/Mama H’s purpose is to share the wonder and beauty of nature and show how something as simple as a flower can bring so much joy and appreciation for life and the world around us!

You will decorate and personalize your container with a variety of decor, vinyl holiday designs/images, and you’ll leave with a beautiful container of bulbs ready to bloom during the holiday season.

This hands-on class teaches you how to chop, dice, and julienne food like a professional. This class is ideal for beginners or those looking to develop a new skill and gain confidence in the kitchen.
